Alfred Enderby Ltd. part of the Grimsby Traditional Fish Smokers Group, is one of only a few independent family run traditional fish smoking firms left in England. The traditional smokehouse with its distinctive tall chimneys is about 100 years old, with two generations of Enderby family involved in running it for two thirds of that time.

Although the core traditional fish smoking process that takes all night remains completely unchanged, the sourcing and supplying ends of the business have under gone great changes over time. Once reliant on Grimsby is own fishing fleet to supply our needs we now deal direct with Icelandic, Norwegian and Faroese companies for large line caught haddocks and specific farms in the Shetland Islands for top quality salmon.

Due to these sustainable sources and being able to take advantage of Grimsbys strategic position at the centre of a chilled fish distribution network we can guarantee daily supplies of freshly smoked fish to anywhere in the country, form large consignments of smoked haddock to London wholesalers to just a few sides of smoked salmon to individual country hotels.

At Alfred Enderby’s we believe that to enjoy smoked salmon at its best it must only be sliced just prior to serving to retain its succulence and full flavour.The This is why we only sell freshly smoked whole sides of Scottish salmon. After a light salting it is smoked for many hours in the old fashioned way to produce a subtle flavour. Vacuum packing is optional but only recommended if the salmon is not to be eaten within a few days. This way you will get the chance to taste smoked salmon as it was before the convenience took over at the expense of appreciation.

The Guild of Fine Food Retailers have recognised this commitment to quality by giving awards to our smoked haddock fillets, finnan haddocks and smoked salmon. We are also included in Rick Steins Food Heroes and Henrietta Greens Food Lovers Britain.

Today the majority of smoked fish is cured in mechanical kilns, but for a hundred years fish was smoked exclusively in traditional smokehouses.

The traditional smokehouses, which have survived in England today, are mainly found in Grimsby where the main developments in the process took place.
